In just a few weeks the Boulder City Supper Club – our newest restaurant in town will be opening their doors – and we can’t wait! We sat down with the trio of principals involved in this project to meet them and learn more about what’s going on!
In the location most locals still know at Evan’s, located at 1129 Arizona Street they’ve made some subtle improvements and plan to open their doors in late August – we’ll have to keep you posted on the specifics tho, so keep watching us for updates! In the meantime, here are you main players!
Meet Scott and Morgan Behnke the husband and wife duo behind the venture, along with their chef (pictured right above) Mario Tapia! Together they have many decades of combined restaurant and restaurant supply experience and are old pros at this game. Scott and Morgan hail originally from the Chicago-land area and have lived in both Illinois and Chicago. They came out to the Las Vegas area in the mid twenty-teens and have been in Boulder City full time since 2020.
What, you may ask, is a Supper Club? We had the same question and we loved what we learned!
This ‘old-school’ mid-western term is commonplace back in Chicago even if it is new to us. it’s more of an attitudinal ‘feel’ than a buttoned down description. It’s home: warm, friendly, inviting. Made to be the Cheers of your routine. No pretense, just good people and good food.
The menu will evolve, but will focus on a good steak, roasted chicken or duck, and a few seafood selections. Behind the bar they’ll have crafted cocktails, beers and wines with a variety of price points.
Scott in particular is someone many of you have known in town and has worked with a variety of our other restaurants in many ways. One thing we noted were their Moscow Mule copper cups – which he said he acquired from Milo’s when that closed, purchasing them from the owners. They’ve improved some of the color schemes and upholstery, and updated the kitchen quite a bit.
Initial hours of operation will be Thursday – Monday, 3pm – 9pm. They say a Sunday Brunch is then next on their horizon.
