Many of us have fond memories of the food from our childhoods. Sergio Weatherly is no different. As the general manager of California Burrito Mexican Grill, he strives to bring back those special memories with every dish served to customers. Whether its the machaca con huevos (shredded beef with eggs) or the burger and fries, he sees a little bit of his mother in every dish.
To understand more about the history of the California burrito, the dish, you can various origin stories on the internet. Some attribute the creation of this unique dish to a popular chain in San Diego. Other restaurants in Orange and Los Angeles Counties also claim the original. But wherever the burrito came from, it was ubiquitous on Southern California taco shop menus by the late 80s. This Cali-Mex favorite is popular at the restaurant and gets an additional boost of flavor from the potatoes inside, along with traditional burrito ingredients like beans and cheese. At California Burrito Mexican Grill, you can order the burrito several ways: ground beef, chicken, shredded beef, and chorizo. The restaurant’s namesake can be customized in any number of ways with delicious add-ins like sour cream and guacamole. Top your burrito with one of the fresh salsas made on the premises and you’re in business.
That’s the appeal of taco places like California Burrito. All their dishes are made to order with fresh ingredients. Most everything is made on the premises, whether it’s the whole pinto beans, the pancakes, or the posole, you can be sure the food is top quality and prepared with care. Behind the counter you’ll find one of the businesses two owners, brothers José Luis Antonio or Cristobal Miguel. One does the cooking and manages the back of the house, while the other runs plates, busses tables, refills waters and keeps an eye on the front of the house. With a handful of employees, there’s a real family feel that lends itself well to the restaurant’s concept: tasty, fast food at very reasonable prices.
General Manager, Sergio, tells us that they are still finalizing the expansive menu, which includes some American dishes like burgers and fries, a kids menu, and a choice of desserts as well. By cooking to order, “…there’s less waste and the food is more plentiful,” Sergio says. Many of the recipes are ones handed down in the family. Sergio mentioned that being back in the kitchen is reminiscent of childhood days watching his mom, who is originally from Chihuahua Mexico. The food is simple, yet tasty, just like mom used to make!
José Luis and Chris were born in Mexico, but raised in the Los Angeles area, where some of the best Mexican food in the United States can be had. They moved to Nevada in 2014. Both worked in various capacities at other restaurants before deciding to pool their talents and resources and open the original California Burrito Mexican Grill in 2017. They operated that restaurant until late last year, when they closed it due to issues related to the pandemic. They saw an opening for the restaurant location at 1208 Boulder City Parkway, which ended up working out well for their business plans. They like the community here and look forward to being part of it.
Did we mention they have a large menu? They have a large menu. There are breakfast and vegetarian options and most any item can be prepared to the customer’s tastes. You won’t find many places in Boulder City serving huevos rancheros (ranch-style eggs served in a delicious, simmered broth) at 8:30 in the morning. You can also get a plate of pancakes and eggs with potatoes and a choice of toast for only $8.99. As previously mentioned, they have a kids menu that is served all day as well, with kid-friendly portions.
The restaurant is open Monday thru Saturday, from 8:30AM to 8:00PM. On Sundays they are open from 8:30AM to 5:00PM. In addition to dine in and take out options, they also offer curbside delivery.
